Founded on February 17th, 1872 by Etienne Singher, a young confectioner from Saint-Moritz, the tearoom was later acquired in 1880 by Joseph Miremont. This name was then maintained through time.
Among the city’s most ancient places, Miremont has witnessed the bright past of Biarritz, "Queen of resorts and resort of the Kings".
About this meeting place for all of Europe’s crowned heads, Rostand once wrote that "at teatime, there are at Miremont fewer pastries than Queens and fewer rum babas than Grand Dukes".
Young King Alphonso XIII would enjoy having lunch here, and appointed Miremont to the Royal House of Spain. H.M King Edward VII of England would stay every year at the Hôtel du Palais but would remain faithful to Miremont confections.
